If you pick all, you'll see data from all enabled graphs; if you choose none, there will be no data displayed at all. You can also list specific graph names using the graph argument.
You can get Monitorix as a source archive, which means you can configure, compile, and install it on any Linux distribution you like. There are also binary packages available for Arch Linux and RPM-based systems.
